Healthier Potato Pancakes – Lighter Latkes
Lighten up this holiday treat
Sometimes the things we crave the most at the holiday meal are the side dishes. Here is a sweet and salty combo that will steal the show at your next holiday feast. Crisp potato pancakes, or latkes, are usually deep-fried in plenty of oil.
With this healthier pan-fried version I like to add parsnips and apples for extra flavor and fiber.
- Shred potato, parsnips, and apple on a box grater or use a veggie slicer with a shredder attachment to create longer strands that hold together better.
- Transfer to a kitchen towel to wring out some of the moisture, then toss in a large bowl with one egg and chopped fresh dill.
- Sprinkle with flour and baking powder and toss well.
- Heat half the oil in a large skillet over medium heat. When the oil is warm, add 1/4 cup scoops of the mixture.
- Cook 1 to 2 minutes until crisp, then turn.
- Transfer to a plate with paper towel to remove excess oil, then sprinkle with a pinch of salt and season with black pepper or lemon pepper
- Repeat with the remaining oil and potato mixture, then serve immediately with unsweetened applesauce.
Make your holiday sides something to remember with these crisp potato pancakes.
