Healthier Potato Pancakes – Lighter Latkes

Lighten up this holiday treat

Sometimes the things we crave the most at the holiday meal are the side dishes. Here is a sweet and salty combo that will steal the show at your next holiday feast. Crisp potato pancakes, or latkes, are usually deep-fried in plenty of oil.

With this healthier pan-fried version I like to add parsnips and apples for extra flavor and fiber.

  1. Shred potato, parsnips, and apple on a box grater or use a veggie slicer with a shredder attachment to create longer strands that hold together better.
  2. Transfer to a kitchen towel to wring out some of the moisture, then toss in a large bowl with one egg and chopped fresh dill.
  3. Sprinkle with flour and baking powder and toss well.
  4. Heat half the oil in a large skillet over medium heat. When the oil is warm, add 1/4 cup scoops of the mixture.
  5. Cook 1 to 2 minutes until crisp, then turn.
  6. Transfer to a plate with paper towel to remove excess oil, then sprinkle with a pinch of salt and season with black pepper or lemon pepper
  7. Repeat with the remaining oil and potato mixture, then serve immediately with unsweetened applesauce.
