A simple take on surf-and-turf

Single or married, looking to impress your date this Valentine’s Day? This easy shrimp cocktail and filet mignon will make a romantic yet healthy meal that will melt any heart! So delicious…they’ll never guess it’s healthy, too.

For an easy shrimp cocktail, buy 12 medium precooked shrimp and a jar of cocktail sauce. To spice up the sauce, grate horseradish and stir it in. Horseradish is low in calories and full of antibacterial compounds. Add fresh lemon wedges and serve in a fancy cocktail glass.

Shop for lean filet mignon at the meat counter or local butcher. Season it with salt and
pepper. Heat a small skillet over medium high heat for about 30 seconds. Add 2
teaspoons of high smoke point safflower oil. Cook the filets without moving for about 2
minutes to get a golden sear, then turn them and cook another 2 minutes to sear the other
side. Slide into a preheated 400-degree oven and bake for 5 minutes until they’re still pink on the inside, but no longer translucent.

Complement your surf-and-turf with sauteed greens of your choice. Now you have a romantic yet healthy meal that will melt any heart!
